OLD ANECDOTE

My second job out of college with my biology degree and nascent songwriting skills was at a restaurant in Harvard Square called 33 Dunster St. A waitperson girlfriend of the time introduced me to the head chef and I was salad prep and lunch line cook for the next 2 years.

About a year in, the owners hired a long retired older man named Isadore SomethingOrAnother, who also claimed to be the inventor of the swirled black and white pumpernickel bagel. He was into using more of what we threw away and trying to save the owners' money. Nice guy, even if I thought the bottom of the celery was maybe too bitter to make stock or salad.

I’ll never forget chopping celery then onions in the prep area with Izzy in my ear to save as much as I could. A waitperson flounced in. He was a guitarist (aren’t/weren't we all?) and he put up a chit for a salad. He looked over at me chopping away:

“Honestly i don’t get how you can take such a risk with your fingers as a guitarist. I woudl NEVER be a prep cook wielding a knife...”

When he left, old Izzy looked around and then looked at me and said, “If he has such little control of a knife in the kitchen, can you only imagine what his fingers do on the guitar and wha that sounds like?"

No mic to drop. I quietly laughed and backhand stabbed the next onion to thin slice.
